Ingredients:
5 medjool dates
1/3 cup dried pineapple
1/4 cup + 2 TB unsweetened shredded coconut
1/4 cup macadamia nuts
1/2 cup rolled oats
Directions:
Combine all ingredients, except 2 TB coconut, in a food processor and process until combined and a coarse consistency is reached. If too wet, add more oats. If too dry, add another date.
Roll into 8 balls. Roll each one in the reserved shredded coconut.
Refrigerate or freeze until ready to eat.
